Pronto Red Beet

Pronto Red Beet (Beta vulgaris)

The health benefits of beets have been documented for centuries. High in electrolytes (sodium, magnesium, calcium, iron and phosphorous), they also contain vitamins A and C as well as niacin. The Betaines in the beet juice stimulate the liver and are considered one of the most powerful cleansing vegetables you can eat.
We chose the Pronto variety for hardiness, flavor and speed of growth. The Pronto boasts nutrient-dense tasty, dark green leaves with deep red petioles. This is ‘Power-juice’ material and the leaves also makes a delicious stir-fry with garlic and olive oil.

Tango Celery

Tango Celery (Apium graveolens)

Packed with high power nutrients including vitamins A, B1, B2, B6 and C, Celery also contains rich supplies of potassium, folic acid, calcium, magnesium, iron, phosphorus and sodium.
Renowned for lowering of blood pressure, recent studies have shown that celery also acts as a powerful anti carcinogen. 
An early, heavy yielder (80-85 days)  with exceptionally smooth 18-20″ green stalks, tango is especially tender, sweet, and never stringy.

Viroflay Spinach

Viroflay Spinach (Spinacea oleracea)

Low in calories and high in vitamins, spinach contains far more than your daily requirements of vitamin K and vitamin A, manganese, folate, and nearly 40% of your magnesium requirement. It is an excellent source of more than 20 different measurable nutrients, including dietary fiber, calcium and protein.
As far back as 1885 this variety has been known as “Epinard Monstreux de Viroflay”—The Monster spinach of Veroflay! These vigorous, big producers bear 10 inch leaves, and can be harvested in just 45-50 days

Siberian Kale

True Siberian Kale (Brassica napus)

The Big Daddy of Greens, Kale is one of the most concentrated sources of vitamin K, and A.  It is also a great source of Vitamin C, manganese, dietary fiber, copper, vitamin B6, potassium, iron, Vitamin E, Omega 3 fatty acids, phosphorous, and also one of the best sources of absorbable calcium anywhere.
This hardy Heirloom is outstanding in both flavor and texture. With fast growing large, frilly blue-green leaves, it’s slow to bolt in summer and withstands hard frosts in Winter.

Carrot Valery

St. Valery Carrot (Daucus carota var. sativus)

Carrots are rich in vitamin A, Vitamin C, Vitamin K, potassium and free arginine, an essential amino acid that contributes to the health of the circulatory system.
In a study meant to reveal therapeutic value of carrots researchers at the Wolfson Gastrointestinal Laboratory in Edinburgh, Scotland revealed that cholesterol level reduces by 11 percent if seven ounces of raw carrots a day is taken for thee weeks.
The St. Valery grows a meaty 8-10” root with an excellent juice yield.
